Varietal:
Cabernet Sauvignon
Region:
Pyrenees, Victoria
Winemaker's Notes:
The 2010 vintage presented a lovely growing season with moderate temperatures and slightly below average rainfall. The grapes for this wine were hand picked, crushed and destemmed and then inoculated with a number of different yeast strains to enhance complexity and then left to ferment for 8 days with regular plunging. The must was then basket pressed and matured in French oak for 15 months. Minimal fining and filtering was then undertaken prior to bottling. The wine is medium bodied with lifted blackcurrant and cassis flavours and aromas and elegant French oak in the background. The firm tannins are very fine making this a lovely food wine that will age gracefully over the next 10-15 years.
James Halliday Review:
Light, bright crimson-purple; fragrant cassis aromas on the bouquet lead into a fresh, light- to medium bodied palate, with cassis again to the fore, French oak, fine tannins and crisp acidity bringing up the rear. Cabernet sauvignon a la mode. Drink by: 2020. Alcohol:12.5%. Rating 93
